Back when I lived in Brazil, this mayo was a must-have on every respectable burder parlor. It's addicting. Too bad it was never enough for me. Well... Until now.
Ingredients
- 2 eggs
- 1 lime
- 2 teaspoons dijon mustard
- 1 pinch salt
- 2 garlic cloves
- 1 ½ cups neutral oil
- ½ cup fresh parsley
- 2 tablespoon green onions
Mise en place

Thinly mince the parsley and green onions.

Peel and crush the garlic cloves.
Directions

Bring all ingredients into a tall container.

With an immersion blender, push the blades to the very bottom and start to blend, leave at the bottom for about 10 seconds without lifting, then gently start to rise towards the top.
You can use a blender if you don't have an immersion blender.
